Our Journey

Years ago, our mother and father shared a dream: to build something meaningful together with their six children — a place where family, faith, hard work, and hospitality could come together in service to others.

That dream became reality when our first restaurant opened on April 27, 1978, at 13th & Q Street in Lincoln as Pontillo’s Pizzeria, which later became DAVINCI’S. Our father, Kalmer Knudson, a pastor at the time, stepped away from full-time church ministry because he believed the restaurant could become a ministry of its own — a place where lives could be touched every day through kindness, generosity, and genuine hospitality.

For our family, serving food was never just about meals. It was about creating connection, building community, and welcoming every guest as if they were sitting at our own table.

In 1977, my brother Kent and I trained at a Country Kitchen restaurant in Green Valley, Arizona, learning the fundamentals of hospitality and restaurant service. Decades later, that experience has come full circle in the creation of Greenfield’s Café — a place rooted in breakfast traditions, while also offering fresh lunch selections, comforting brunch favorites , and catering designed to bring people together.

The name Greenfield’s comes from Psalm 23:2: “He makes me lie down in green pastures.” I simply exchanged the word pastures for fields — because Greenfield’s represents peace, provision, and the simple blessing of gathering around good food.

Today, that original family vision has grown into something larger through Knudson Ventures — a family of businesses built on service, trust, and community impact. Alongside Greenfield’s and DaVinci’s, QTEQ Computers reflects that same commitment by serving businesses and families through technology solutions and trusted support.

Though each business serves people differently, they all share the same foundation: relationships matter, excellence matters, and people should leave better than when they arrived.

Now, as our family continues this journey into the next generation, there remains a special joy in serving every guest who walks through our doors.
